Happy Belated Birthday Sis!
I have taken so long to make this cake, that not only has my sister's birthday been and gone, but so has mine! ... Does that mean we stay a year younger? Seriously if there's no cake, and no candles, then we didn't get to blow the past year away... right? (Oh, sorry Jade, I forgot, you did get a cake at home! You are older!).
Well, I do like celebrating each year I have had, so I may have to get some candles and make a wish or two! I don't mind being a year older, it is ok! I even have a few grey hairs this year, which is kinda exciting, but I can say that I guess, because I probably am owed a few more at my age!
I am being silly!
I am sorry that I haven't been cooking very much. Well, anyway, sorry that I haven't been cooking from the ledger! It's just everything is so buttery, so heavy, and so uses the oven. And it is hot here! I am sitting in the a/c right now - which I hate that I love - I went out once today, to the Post Office, and that's enough even on a nice day (have I told you how much I hate the Post Office in NYC before? It is awful!) I have missed writing to you all about my discoveries, or lack thereof, and thought I would pull my finger out and make that cake. It is in the oven right now. It was supposed to take 20 minutes, but it isn't nearly ready.. I must've made it at the wrong temperature (would help if I knew what temperature it was meant to be to start with, right?). The kitchen is smoking (I don't think the new oven we got when we moved in is very good. Anything that gets put into cook sends smoke drifts out the top of the oven, - and I don't think a mouse is living in there or anything), so I had to open the windows and let all the smoke, and cold air, out. So, I locked myself in our bedroom, where the aircon is, to write to you, and cross my fingers that the cake bloody cooks!!
I'll make it look pretty with icing, so you'll never know!
Coffee Cake
3 cups of flour
1 1/2 cups sugar
4 eggs
1 cup of milk
1 tsp bicarbonate soda
2 tsp cream of tartar
1/2 lb butter beaten to a cream
~ Bake 20 minutes
(I ended up baking for 50 minutes in a 350 f oven)
~ I added cream cheese icing, and while it was nice, we think the cake would be better without any icing. We scraped ours off, and will use it for another cake! It is a really moist and delicious cake with a nice crunchy and buttery edge.
